Kheera Lauki Gajar Roti / Paratha

 



On my weight loss journey I wanted to replace normal rotis / phulkas with some food item which is delicious while satisfying the hunger. This led to the idea of creating an easy to make roti / paratha. I donot know rolling rotis, hence decided to use roti maker to make parathas.

This led to the creation of a simple, quick to make paratha using roti maker. This whole some paratha helps to detoxify body while making you feel full. It is light on Carbs and has wholesome nutrients.

My wife and kids finish them in a jiffy, I am sure you will like it too.

Kheera/ Cucumbers are low in calories but high in many important vitamins and minerals. They contain Antioxidants, promote Hydration and regularity. 

Bottle gourd is helps in hydration, rich source of vitamin C, K and calcium. It helps in maintaining a healthy heart and brings down bad cholesterol levels. It stabilizes the blood sugar level and maintains blood pressure.

Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. They have been linked to lower cholesterol levels and improved eye health.

These 3 super veggies together help in detoxing the body when consumed regularly.

Ingredients :
  • 1 Whole Cucumber
  • 1/2 Medium sized Bottle Gourd
  • 2 Medium Carrots
  • 2 tablespoons Fennel Seeds/ Sauf
  • 2 cups Whole Wheat flour ( Chapati Atta )
  • 3 tablespoons Cooking Oil / I recommend Canola or Olive oil
  • 1 teaspoon Salt or more per taste
  • 1 teaspoon Turmeric Powder
  • 1 tablespoon Kitchen King Masala / Garam Masala
  • 1 tablespoon Red Chili Powder ( I used Resham Patti to get added texture )
  • 1 teaspoon Rasam Powder
 


Lets make this delicious satvik paratha :
1. Take a full cucumber, half bottle gourd, 2 medium carrots, 2 red/ green chillies, 2 tablespoons of fennel seeds / sauf and process in a food processor until the following consistency is achieved


 

After processing using a food processor



2. Other ingredients :

2 cups Whole Wheat flour ( Chapati Atta )
2 tablespoons Cooking Oil 
1 teaspoon Salt
1 teaspoon Turmeric Powder
1 tablespoon Kitchen King Masala / Garam Masala
1 tablespoon Red Chili Powder ( I used Resham Patti to get added texture )
1 teaspoon Rasam Powder




3. Add Salt, Turmeric, Kitchen King/ Garam Masala, Rasam Powder, Chilli Powder to the processed vegetables and mix well













4. A whole wheat flour and knead the flour in the juices of vegetables




5. Add water in small quantities until the dough becomes soft. I ended up adding only 1/3 cup of water to the dough, this amount will depend on multiple factors including the type of wheat flour and the amount of water in the cucumber and bottle gourd




6. Pour and Pat oil all across the top surface of the dough
 

7. Heat a griddle on cooktop and rotimaker, set the temperature of roti maker to around 80% of your max heat setting. I am using a 10inch diameter roti maker with 1000 W of heating power

 


8.  Wait for the Roti Maker to heat to the set temperature, place a ball of dough around the center of the heating surface, pat some oil on the top layer of the dough, press the roti maker to create the roti
  


 
 
9.  Heat roti in roti maker on both sides while applying few droplets of cooking oil


10. Move roti to griddle, cooking roti on griddle cooks the rotis better than roti maker.
  





Serving Tips:
All masalas and veggies present the the roti this does not need any additional side element and can be consumed with yogurt, pickle. To make the serving royal you can add choice of dal and vegetables.



Some useful tips :
  • Fennel seeds in the main veggie mixture adds a refreshing flavor to the rotis
  • Mince the veggies in food processor or by hand to tiny bits, Cucumber and Bottle Gourd will start releasing water
  • You can knead the dough without adding 1/3 cup of water if you prefer to roll rotis by hand. Please note you might need to add some water per your preference to reach the right level of softness for hand rolling.
  • The rotis in roti maker will become round if the dough is a round sized ball, if the ball placed to the center of roti maker is has some imperfections it will no be round.
  • The texture or flavor does not change if the rotis with the shape of rotis :) having a non spherical shape for rotis is perfectly normal.
